How are judges trained and chosen for barbeque competitions?

The Kansas City Barbeque Society, or KCBS, is a nonprofit organization dedicated to "promoting barbeque and having fun while doing so." The Kansas City Barbeque Society (KCBS), boasts over 6,000 members world-wide, and is the world’s largest organization of barbecue and grilling enthusiasts.

Carolyn Wells and Rick Welch are credited with originating this food fan club, which was born in 1985. It gained a following by providing information about barbeque competitions to interested participants. The society sponsored its first cook-off, "Spring Training," in 1985.

Today, judges for official competitions across the nation are trained by the society. They follow a 16-page handbook of guidelines and procedures. KCBS sanctions more than two hundred barbecue contests across the U.S. each year and offers assistance to civic and charitable organizations with producing these events.

KCBS serves as a clearinghouse of barbecue information which provides:

Networking with related trade associations and other contest-sanctioning organizations
Tracking trends in barbecue related products, and equipment
Teaming up with other food organizations and the media to promote barbecue
With their library, and extensive archive of barbecue related articles, KCBS offers educational programs, consultation services, and civic organization presentations

They have also produced a book, The Passion of Barbeque.
